Sigh….what should I have for dinner tonight? I need some quick and easy recipes since I’m short on time these days. I really like things that are one-pot or casseroles too.

We grill as much as possible since the weather is so hot but I’m getting tired of steaks, ribs, and brisket. I want something mexican or chinese. Maybe even just some chicken fried steak with mash taters, corn on the cob, biscuits and gravy! YUMMY.

I’m making myself hungry now.
